Chicken Tikka Masala (IP)
Ingredients
  • 2 pounds boneless skinless chicken breasts - cut into bite-size pieces
  • 1 ½ tsp salt - divided
  • 1 tablespoon butter or coconut oil
  • 1 small yellow onion - finely chopped
  • 3 large cloves garlic, minced
  • 2 tbsp minced fresh ginger
  • 2 tbsp garam masala
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp turmeric
  • 1 tsp ground cayenne
  • 1 can, 8 oz, no salt added tomato sauce
  • ½ to ¾ can light coconut milk - (14 ounces)
  • 1 cup broccoli and/or cauliflower
  • ¾ cup frozen peas
  • ½ cup plain nonfat Greek yogurt
  • Prepared brown rice - or naan, for serving
  • Fresh cilantro - for serving
