Chickpea-based Chocolate Chip Cookies
Chickpeas actually work incredibly well in baking, giving a nutty flavour and keeping the end result quite moist, think a soft chewy style chocolate chip cookie. My favourite type!

The sweetness in this recipe comes mainly from bananas, although there is still a small amount of brown sugar in the recipe too. 1/4 cup over a batch of 20 large cookies which is pretty good for a cookie.

I tried other sugar options and I tried less sugar, but it was the 1/4 cup of brown sugar which kept the balance of health and yum factor.
Ingredients
  • 1 Can chickpeas (400g)
  • 1 Cup Oats
  • 2 medium bananas
  • ¼ Cup brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ¼ Cup dark chocolate chips
