Spicy Roasted Cauliflower over Hummus
Ingredients
  • 1 head cauliflower, stem removed and chopped into bite sized florets
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon crushed red pepper flakes
  • 1 garlic clove, minced
  • juice ½ lemon
  • salt and pepper to taste

  • 1 (15 ounce) cans garbanzo beans, drained (reserving half the liquid)
  • ¼ cup tahini
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • juice of 1 lemon
  • salt to taste
  • chopped parsley, optional garnish
  • chopped mint leaves, optional garnish
  • crushed red pepper flakes, optional garnish
  • lemon zest, optional garnish
  • grilled pita, for serving
