Ottolenghi Broccoli & Peanut Dressing
Ingredients
  • 600g tenderstem broccoli, washed well
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • salt
  • subheading: For the brown sugar peanuts:
  • 1 tbsp light soft brown sugar
  • 1 tsp soy sauce
  • 1 tsp olive oil
  • 50g blanched unsalted peanuts
  • subheading: For the peanut gochujang dressing:
  • 100g smooth all-natural peanut butter
  • 2 tsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp light soft brown sugar
  • 2 tbsp lime juice
  • 10g fresh ginger, peeled and finely grated
  • 2 garlic cloves, peeled and crushed
  • 2 large makrut lime leaves, stems discarded and leaves finely chopped
  • 10g chives, slices into 1½cm lengths
