Tuscan Cannellini Bean Soup
Ingredients
  • 1 cup unsulfured, unsalted dried tomatoes
  • ½ cup unsweetened soy, hemp or almond milk
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh rosemary
  • 1 ½ cups cooked cannellini beans or 1 (15 ounce) can no-salt-added or low-sodium cannellini beans
  • 1 ½ cups diced tomatoes
  • 1 ½ cups tomato puree, no-salt-added
  • 3 cups vegetable broth, no-salt-added or low sodium
  • 1 cup water
  • 1 tablespoon Dr. Fuhrman's MatoZest or other no-salt seasoning
  • 6 cups collard greens, cut chiffonade (very thinly sliced)
  • 2 tablespoons Dr. Fuhrman's Black Fig Vinegar or balsamic vinegar
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh basil
