Halloumi & Tomato Penne Pasta

Ingredients
  • 150 grams Cherry tomatoes
  • 100 grams Asparagus
  • 150 grams Penne pasta
  • 200 grams Halloumi Cheese ; cubed
  • 30 grams Fresh rosemary
  • 6 cloves Garlic ; minced
  • 1 tablespoons Olive oil
  • 0.5 whole Lemon ; juice
  • 1 pinch Sea Salt
  • 1 pinch Black pepper
Steps
  1. Boil the penne pasta.
  2. Slice cherry tomatoes mix with asparagus, olive oil, rosemary, crushed garlic, salt & pepper.
  3. Roast vegetables 180C for 25 min or until blistering.
  4. Combine pasta, roast vegetables and spinach in pan
  5. Fry the halloumi in separate hot pan.
