Gluten-Free Pasta with Avocado Cream Sauce
Ingredients
  • ⅔ pound uncooked gluten-free spaghetti or fettuccini
  • 2 teaspoons grapeseed oil, canola oil or olive oil
  • 3 ounces prosciutto, roughly chopped
  • 3 tablespoons water, gluten-free broth or white wine
  • 1 bunch asparagus, woody ends discarded and stalks sliced into thirds
  • 1 large red bell pepper, thinly sliced
  • 2 shallots, chopped
  • 2 garlic cloves, chopped
  • 1 large ripe avocado, peeled and pitted
  • Juice of ½ lemon
  • ¼ teaspoon chili powder
  • 2 pinches salt
  • ⅓ cup sliced black olives, optional
  • ⅓ cup sliced fresh basil
