Very Low-Fat, Low-Calorie Oatmeal Raisin Cookies
Ingredients
  • 1 C. White Flour (could sub wheat if wanted)
  • 1 ½ C. Quick oats (Quaker Quick Oats)
  • ½ C. Splenda
  • 1 tsp. Baking soda
  • Dash of Cinnamon
  • ¼ C. Sugar free applesauce (I used the snack pack)
  • ¼ C. + 2 Tbsp. Honey
  • 1 tsp. Vanilla extract
  • 1 ¼ C. Raisins
  • Could also add nuts, dried cranberries, dried cherries, dried apples - I suppose any dried fruit you wish. I REALLY liked the jumbo raisins! YUMMY!!!!

  • You could also use all black raisins for a traditional oatmeal raisin cookie, but I had these raisins in the cabinet and decided to give it a try. The colors in the raisins make them more attractive. Also, you could probably reduce the Splenda by ½ only using ¼ cup because these cookies are very sweet! They are chewy and delicious! As you can see from the picture - they make rather big cookies!
