One-Pot Spanish Rice & Beans
Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 2 ¼ cups vegetable broth
  • 1 ½ cups basmati rice
  • 1 (15 ounce or 400 gram) can red kidney beans, drained and rinsed
  • 1 tablespoon tomato paste
  • Salt to taste (I used ½ teaspoon)
  • 1 cup pimento-stuffed green olives, halved
  • ¼ cup chopped fresh cilantro
