Jamie Oliver's Fantastic Fish Tagine
Ingredients
  • 6 x 120g fresh or frozen skinless white fish fillets
  • olive oil
  • sea salt and freshly ground black pepper
  • 2 red onions
  • 3 cloves of garlic
  • 1 red capsicum
  • ½ a fresh red chilli
  • optional: 1 small preserved lemon
  • 6 ripe tomatoes
  • 1 cinnamon stick
  • optional: ½ teaspoon saffron threads
  • 1 tablespoon runny honey
  • a handful of green olives, stone in
  • 400ml quality fish stock
  • 8 medium carrots
  • 450g couscous
  • extra virgin olive oil
  • 1 tablespoon ground cumin
  • subheading: For the chermoula paste:
  • a bunch of fresh coriander
  • a bunch of fresh mint
  • 2 cloves of garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • juice of 1 lemon
  • subheading: Equipment:
  • Food processor (standard blade)
  • Measuring spoons
  • Chopping board
  • Chopping knife
  • a large heavy-based saucepan with lid
  • Wooden spoon
  • Measuring jug
