VB Creamy Lemon Pasta

Ingredients
  • 1 c Cashews (soaked)
  • 1 Lemon juiced and zested
  • 4 Cloves garlic
  • 1 tbsp butter (can use miso paste)
  • pepper
  • sale
  • turmeric
  • 3 c reserved pasta water
Steps
  1. Boil water to cover cashews and soak for 15 mins
  2. Saute garlic and butter for 5 mins (until fragrant)
  3. Transfer garlic to the blender, add lemon juice, lemon zest, pepper, salt, turmeric, and drained cashews.
  4. Hold back 3 c of pasta water when draining.
  5. Add 1.5 c of pasta water to blender and blend until smooth (adding more water if needed).
  6. Once consistency is reached, toss with pasta and serve
