Vegan Instant Pot Chili

Ingredients
  • 1T vegetable oil
  • 1 cup chopped onion
  • ¾ cup chopped carrots
  • 3 cloves garlic, minced
  • ¾ cup chopped celery
  • 1 28 oz. can diced tomatoes
  • ¾ cup bulgur
  • 1 T chili powder
  • 1 T cumin
  • 2 tsp. salt
  • 1½ tsp. oregano
  • 1½ tsp. basil
  • 2 cups dry red beans
Steps
  1. 1. Hear oil in IP on "saute" and saute onions, carrots, celery, and garlic until tender. Turn off IP
  2. 2. Add seasonings, tomatoes, beans, bulgur, and 4 cups water. Stir.
  3. 3. Close lid, turn to "sealing," turn on "bean/ chili" setting, or pressure cook on " manual" for 60 minutes.
  4. 4. Let pressure naturally release, then open. Stir well and serve.
