Cast-Iron Skillet Calzone
Ingredients
  • 2teaspoons extra-virgin olive oil
  • 1pound hot or sweet Italian sausage, casings removed
  • 4ounces thinly sliced pepperoni, quartered
  • 2 garlic cloves, minced
  • 2pounds pizza dough
  • 8ounces (1 cup) whole-milk ricotta cheese
  • 2tablespoons chopped fresh basil
  • 1teaspoon pepper
  • 1pound mozzarella cheese, shredded (4 cups)
  • 1cup low-sodium marinara sauce
  • 1 large egg, lightly beaten with 2 tablespoons water
  • 2teaspoons toasted sesame seeds, (optional)
  • InstructionsSERVES 6 TO 8
  • note: NOTE FROM THE TEST KITCHEN Use low-sodium marinara sauce to prevent the calzone from becoming overly salty. Serve with extra marinara sauce, if desired.
