  • 2 large carrots, chopped into rounds {you can sub 2 cups of matchstick carrots if you could like}
  • ½ of a large red onion, spiralized
  • 1 jalapeno, seeds removed, thinly sliced {optional for spice}
  • subheading: For the dressing:
  • 2 Tablespoons of rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon thai chili garlic sauce {more or less for spice}
  • 1 teaspoon grated fresh ginger
  • pinch of salt and pepper
  • ¼ teaspoon crushed red pepper flakes {optional for spice}
  • subheading: Garnishes:
  • Fresh cilantro
  • Freshly chopped green onions
  • Sesame seeds
  • Extra jalapeños
