Ingredients
  • note: STARTER MIX*
  • ⅓ cup (77 ml) water (room temp)
  • ½ cup (65 g) all-purpose flour
  • ¼ tsp dry active yeast
  • note: DOUGH*
  • 3 cups (390 g) bread flour or ap flour
  • the starter mix
  • ½ tsp salt
  • ½ Tbsp sugar
  • 2 tsp dry active yeast
  • 2 Tbsp (30 ml) cooking oil
  • ¾ cup (177 ml) evaporated milk (or whole milk)
  • 1 large egg (for egg wash)
  • extra Everything But The Bagel seasoning for topping
  • extra flour and extra milk until dough comes together if needed
  • CREAM CHEESE MIX*
  • 8 oz (227 g) cream cheese (softened)
  • 1 to 1 ½ tsp Everything But The Bagel seasoning mix
  • 2 tsp dried chives
  • ¼ tsp dried dill
  • 1 tsp dried parsley
  • ¼ tsp black pepper
  • subheading: DOUGH WITHOUT STARTER:
  • 3 ½ cups (455 g) bread flour
  • ½ tsp salt
  • ½ Tbsp sugar
  • 2 ¼ tsp dry active yeast
  • 2 Tbsp (30 ml) cooking oil
  • 1 ½ cups warm evaporated milk
  • note: extra flour or milk until dough comes together
  • note: combine all ingredients and knead until the dough is smooth
