Ingredients
  • 1.5kg starchy potatoes such as Sebago
  • Extra virgin olive oil
  • 2 sprigs thyme, leaves picked
  • Sea salt and black pepper
  • subheading: Miso-cashew cream:
  • 300g (2 cups) raw cashews
  • 3 cloves garlic, peeled and roughly chopped
  • 2 tablespoons miso paste
  • 1 cup vegetable stock or water
  • 1 cup non-dairy milk such as oat, see tips above for alternatives
  • 4 sprigs thyme, leaves picked
  • 1 teaspoon sea salt, or more to taste
