Veggie Tostadas

Ingredients
  • 1 large zucchini (2 regular)
  • 1 med onion
  • 6-8 oz can mushrooms, undrained
  • ¼ cup celery
  • 2 tbsp oil
  • 6 tortillas
  • 1½ cheddar cheese
  • ½ sour cream
  • 1 large tomato
  • 2 avocado
  • subheading: Optional:
  • shredded chicken
  • black soy beans
  • other left over meats, like pork or beef
Steps
  1. Combine veggies in a sauce pan, bring to boil, turn to simmer for about 4 minutes. Drain well, do not over cook.
  2. Fry tortillas until crisp, drain on paper towels.
  3. Arrange tortillas on large baking pan, may take 2 so they lay flat.
  4. Divide veggie mix on tortillas, add cheese and any optional protein (cooked)
  5. Cook under broiler for about 2 minutes, until cheese melts.
  6. Remove from oven, add tomato, avocado, and sour cream
