Easy Instant Pot Jambalaya

Ingredients
  • 1 lb smoked sausage or kielbasa, diced
  • 2 boxes Zatarain's Jambalaya mix (8 ounce regular size, not family)
  • diced onion and garlic (optional)
  • 4 cups water
  • 15 ounce can diced tomatoes
  • ½ lb cooked shrimp (I used salad shrimp)
Steps
  1. Add sausage, jambalaya mix, onion, garlic, water and diced tomatoes to the pot, stir well.
  2. Cook on manual or pressure cook for 12 minutes on low pressure , then quick release OR high pressure 3 minutes, 10 minute NPR.
  3. Add shrimp and stir until hot.
Notes
  • You can also saute the onion, garlic and sausage first in a little oil if you'd like.
  • We've also added diced chicken seasoned with a little salt and pepper to this and kept the cooking time the same.  The pic is the version with diced chicken.
