  • 2 tablespoons unsalted butter, room temperature

  • Meringue Topping
  • 4 large egg whites, from reserved, room temperature
  • ½ teaspoon vanilla extract
  • Pinch kosher salt
  • 1 cup granulated sugar, plus 2 tablespoons
  • ½ cup water
