  • ¼ cup finely chopped red onion
  • 1 jalapeño chile, seeded and finely chopped
  • 1 cup cooked dried, or rinsed and drained canned, black beans
  • 4 ounces reduced-fat pepper jack cheese or sharp cheddar, cubed (about 1 cup)
  • 1 ripe avocado, pitted, peeled, and sliced
