  • 2 tsp. baking powder
  • 1 ½ tsp. cinnamon
  • ¼ tsp. salt
  • 1 ¼ cups unsweetened vanilla almond milk
  • ½ cup unsweetened applesauce
  • ½ cup (about 4 large) egg whites or liquid egg substitute
  • 1 tsp. vanilla extract
  • ¼ tsp. almond extract
  • 1 cup canned fruit cocktail in juice, not drained
  • ¾ oz. (about 3 tbsp.) sliced almonds
  • Optional toppings: natural sugar-free pancake syrup, powdered sugar
