Savoy Cabbage Rolls (Vegan)
Ingredients
  • 1 head savoy cabbage
  • 2 cups russet potatoes scrubbed & diced
  • 2 large yellow onions--thinly sliced (≈2 cups)
  • 6 cloves garlic--minced
  • 1 1⁄2 teaspoons Ras el Hanout
  • 1 cup whole-wheat couscous
  • 1 cup kale-finely chopped
  • 1 tablespoon fresh lemon juice
  • sea salt
  • freshly ground black pepper
  • 2 1⁄4 cups low-sodium tomato sauce
  • 1 tablespoon garlic powder
  • 1 1⁄3 tablespoons fresh parsley finely chopped
  • 1⁄4 teaspoon freshly ground black pepper
  • 1 tablespoon pine nuts chopped
