Healthy No-Bake Squares
Ingredients
  • subheading: Squares:
  • 200 g dates previously soaked in water for 1 to 2 hours
  • 100 g roasted almonds finely chopped
  • 100 g rolled oats
  • 30 g dried apple rings chopped
  • 50 g dried apricots chopped
  • 20 g shredded coconut
  • 10 g chia seeds
  • 3 to 4 tablespoons melted coconut oil
  • subheading: Chocolate frosting:
  • 80 g coconut cream the thickened cream from a can of full-fat coconut milk
  • 80 g dark chocolate (85% cocoa)
  • 2 tablespoons agave syrup
Steps

  2. Line the pan (I used 20 x 14 cm) with baking paper.
  3. Combine the dry ingredients in one bowl.
  4. Drain dates and add them to the blender. Add in 4 tablespoons of melted coconut oil and blend until you get a thick paste.
  5. Transfer the date paste to the bowl with dry ingredients and stir until all is well combined and the mixture sticks together. You can use a hand mixer for this.
  6. Press the mixture down firmly into prepared pan.
  7. Place it in the fridge for a couple of hours to firm up.
  8. subheading: Chocolate frosting:
  9. Melt chocolate over low heat in a medium pot. Stir until smooth.
  10. Place coconut cream, melted chocolate and agave to the blender and blend briefly until smooth.
  11. Spread the frosting all over the top of the base.
  12. Place it in the fridge for half an hour to allow the topping to firm up.
  13. Chop into bars or squares.
