Oatmeal Green Smoothie Muffins
Ingredients
  • 2 eggs
  • ¼ cup coconut oil, melted
  • 2 bananas, very ripe
  • ⅓ cup honey or maple syrup
  • ½ tbsp pure vanilla extract
  • 2 cups rolled oats, uncooked Gluten Free option, use gluten free oats
  • 1 tsp baking soda
  • 1 ½ tsp apple cider vinegar
  • ¼ tsp sea salt
  • 1 tsp cinnamon
  • 1 to 2 handfuls baby spinach depending on how green you want them. Just don't go crazy, as too much spinach add too must moisture to the recipe and muffins will turn out wet.
  • ¼ cup unsweetened almond milk
