Carrot Cake Steel Cut Oats - M
Pressure Cooker

Ingredients
  • Oil spritzer
  • 1 cup steel cut oats (17 SP)
  • 3 cups water
  • ¼ teaspoon salt
  • 1 cup grated carrots (optional)
  • subheading: Add after cooking:
  • 2 t cinnamon
  • 1 teaspoon pumpkin pie spice (optional flavor)
  • 3 tablespoons maple syrup (Waldenfarms = 0 SP) (optional for extra sweetness)
  • ⅓ cup (54 gm) craisins reduced sugar (6 SP)
  • 1 T Truvia Brown Sugar (2 SP)
Steps
  1. Spray pot with oil.  Set cook time to 10 minutes.  Add the oats, water, and salt.  Add shredded carrots here if using them. Stir.
  2. Put pressure cooker lid on and seal. Be sure vent is closed.
  3. When beep sounds, turn off pressure cooker and use a natural pressure release.  When valve drops carefully remove lid.
  4. Stir in spices, craisins, Truvia brown sugar, and maple syrup.
  5. Add milk if desired. Serve.
Notes
  • Add 1 to 2 chopped apples (before or after cooking) to make this go further.
