Grandma's Mulligatawny Soup
This was one of Grandma Nancy Wilke's favorite lunch treats. She would sip it slowly from a Chinese soup spoon. She would often cook it for guests. I shared many a bowl with her :)
Ingredients
  • ½ c butter
  • 1 c diced onion
  • 4 ribs celery diced
  • 2 diced carrot
  • 3 tbsp flour
  • 4 tsp curry powder
  •  
  • Chicken broth / stock
  • 2 bay leaf
  •  
  • 1 c boiled orzo
  • 1 c diced green apple
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp grated lemon rind
  • ¼ tsp thyme
  • chicken pulled from a costco chicken
  •  
  • 1 c hot cream
Steps
  1. Saute lightly, but do not brown, onion, carrot, and celery in butter. Stir in flour and curry powder and cook about 3 minutes.
  2. Stir in broth and bay leaf.  Simmer 15 minutes.
  3. Add orzo, apples, salt, pepper, lemon rind and thyme.  Pull chicken from the bones and add, if desired.
  4. Simmer for another 10 minutes.
  5. Blend in hot cream for the final touch!
