Chicken Mulligatawny Soup
Indian inspired
Ingredients
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 large onion, chopped (about 2 cups)
  • 2 carrots, chopped (about 1 cup)
  • 2 bay leaves
  • 4 teaspoon yellow curry powder
  • 1 ¼ pound (570 g) boneless, skinless chicken thighs, trimmed of visible fat
  • 2 cups (475 ml)  chicken stock
  • 2 cups (475 ml) water
  • 1 ½ teaspoons kosher salt (or 1 teaspoon sea salt)
  • ¼ cup uncooked basmati rice
  • 2 tart apples, cored, peeled, and chopped (about 2 cups)
  • ¼  (60 ml) cup heavy whipping cream
  • ¼ cup (60 ml) plain yogurt for garnish
  • 1 Tbsp minced chives for garnish
