Barley Wild Rice Pilaf
Ingredients
  • 1-½ cups diced celery
  • 1 cup chopped onion
  • 1 clove minced garlic
  • 1 tsp fresh thyme leaves or chopped fresh sage
  • ¼ cup butter
  • 1 cup uncooked wild rice rinsed
  • 1 cup barley
  • 4 cups water or vegetable stock
  • ½ cup dried cherries quartered (or craisins)
  • ½ cup dried apricots quartered (or golden raisins)
  • ½ cup pecans toasted
  • ½ tsp Salt
  • ¼ tsp freshly ground pepper
