  • ¼ cup unsalted butter
  • 1 Tbsp minced fresh thyme leaves or 1 tsp of dried thyme
  • 1 medium yellow onion minced
  • 2 cloves garlic minced or grated
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ to ½ tsp freshly grated nutmeg optional but recommended
  • 3 Tbsp all purpose flour
  • 2 ½ cups whole milk
  • 2 lbs. Yukon gold potatoes sliced very thinly, about ⅛ inch thick
  • ⅓ cup grated Parmesan cheese freshly grated tastes best
