My Spanish Chicken Stew

Ingredients
  • 1 Chicken Supreme, or equivalent chicken breast/thighs
  • 1 medium onion, chopped
  • ½ Brindisa chorizo sausage, or maybe more
  • ¼tsp smoked paprika, maybe more
  • 1 large red pepper/1½ medium
  • 1 large clove garlic
  • splash of white wine
  • couple springs of thyme
  • 100ml chicken stock, add more water as necessary
  • ¼ to ⅓ tin Mutti tomatoes
  • black pepper
  • Crusty bread/focaccia, to serve (or potatoes)
  • Parsley, to serve, optional
  • Runner beans/Green Beans/Spring Greens, to serve
Steps
  1. Fry chicken for a couple min on both sides, on medium heat . Remove and fry chorizo for a couple min. Add onions and fry until starting to brown at edges. Add garlic and smoked paprika and stir around. Add red pepper and fry around until cooked down and onion is golden brown. It adds flavour to have some browning. Deglaze with the wine, add thyme and stock. Cook for 10m. Meanwhile get any bread and veg ready. Add tomatoes and black pepper. Cook for another 15m. Loosen with water if needed.
