Weetbix lemon and coconut muffins

Ingredients
  • 4 weetbix crushed
  • 1 cup wholemeal self raising flour
  • ½ tsp baking powder
  • ½ cup coconut oil, melted
  • 1 egg
  • 100ml almond milk
  • ¼ cup maple syrup
  • 1 lemon zested, half lemon juiced
  • ½ cup shredded coconut
Steps
  1. 1. Mix together dry ingredients in a bowl (not coconut).
  2. 2. Melt coconut. Mix in egg, milk and maple syrup.
  3. 3. Pour wet mixture into dry and stir till combined.
  4. 4. Stir in lemon zest and juice, and coconut.
  5. 5. Cook at 180°C for 23 minutes.
