Easy Slow Cooker Butternut Squash Risotto
Ingredients
  • 2 tsp olive oil
  • 2 medium shallots
  • 1 medium butternut squash (peeled, seeded and cubed)
  • 4 cups vegetable broth
  • 1 ½ cup parmesan cheese (use a rennet-free cheese for vegetarians)
  • 1 ½ cups short grain brown rice
  • 4 large basil leaves
  • Salt and pepper to taste
