Vegan Biji (Okara) Scramble
Ingredients
  • ¾ to 1 cup of packed, pressed biji/okara
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbs nutritional yeast
  • ½ tsp turmeric
  • 1 Tbsp soy milk
  • 1 tsp corn meal
  • veggies (we used chives and tomatoes from our backyard garden, but mushrooms, spinach, broccoli, kale would all be good)
  • salt and black pepper to taste
