IP Navy Bean Soup
Ingredients
  • I first cut ¼ pound of bacon into small pieces and turned on the IP to saute. Once the bacon begins to get crisp I removed it, set it aside. I took out all but 2 tablespoons of the bacon grease and sautéed 1 cup of celery, cut up, ¾ cups of baby carrots, cut and 1 medium size onion chopped until the onions were clear. I added 4 cups of chicken broth and ¼ pound of Navy beans that I had soaked for 4 hours, you could use ½ pound also, rinsed and salt and peppered lightly. I mixed all together in th IP, put the lid on and set on pressure cook for 14 minutes. Quick released after 14 minutes then determined how much more salt and pepper and pressure cooked for an additional 8 minutes and let pressure release naturally. Opened, smell and ate til I was full!
