Ingredients
- 4 cups old-fashioned oats
- 1 cup chopped nuts (I used slivered almonds and pecan pieces)
- 2 teaspoons ground cinnamon
- ¾ teaspoon fine sea salt
- ¾ cup sugar free maple syrup
- 2 teaspoons vanilla extract
- stevia to taste
- Optional: chopped dried fruit or chocolate chips
Steps
- Heat oven to 350°F. Line a large baking sheet with parchment paper.
- In a large mixing bowl, stir together oats, nuts, cinnamon, stevia, and sea salt until combined.
- In a small bowl, stir together the maple syrup and vanilla extract.
- Pour the maple syrup mixture into the oats mixture, and stir until combined.
- Spread the granola out evenly on the prepared baking sheet. Bake until the granola is lightly toasted and golden, about 25 minutes, stirring once halfway through.
- Remove from the oven and let cool until the granola reaches room temperature. Then stir in the dried fruit, chocolate chips or any other optional add-ins.
- Store in an airtight container at room temperature for up to 1 month.
