Ingredients
  • 4 cups old-fashioned oats
  • 1 cup chopped nuts (I used slivered almonds and pecan pieces)
  • 2 teaspoons ground cinnamon
  • ¾ teaspoon fine sea salt
  • ¾ cup sugar free maple syrup
  • 2 teaspoons vanilla extract
  • stevia to taste
  • Optional: chopped dried fruit or chocolate chips
Steps
  1. Heat oven to 350°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, stir together oats, nuts, cinnamon, stevia, and sea salt until combined.
  3. In a small bowl, stir together the maple syrup and vanilla extract.
  4. Pour the maple syrup mixture into the oats mixture, and stir until combined.
  5. Spread the granola out evenly on the prepared baking sheet. Bake until the granola is lightly toasted and golden, about 25 minutes, stirring once halfway through.
  6. Remove from the oven and let cool until the granola reaches room temperature. Then stir in the dried fruit, chocolate chips or any other optional add-ins.
  7. Store in an airtight container at room temperature for up to 1 month.
