Bittman, Salmon Roasted in Butter
Ingredients
  • ¼ cup (½ stick) butter
  • ¼ cup minced chervil, parsley, or dill
  • 1 salmon filet, 1½ to 2 lbs
Steps
  1. Preheat oven to 475°F. Place butter and 2 TBS of herbs in roasting pan just large enough to fit salmon (may have to cut it in half) and put in oven. Heat for 5 minutes, until butter melts and herbs begin to sizzle
  2. Add salmon to pan, skin side up. Roast for 4 minutes. Remove from oven, then remove skin (should peel off; if not, roast another 2 min). Sprinkle with salt and pepper and turn filet over. Sprinkle with salt and pepper again.
  3. Roast for another 3 to 5 minutes, depending on thickness and degree of doneness preferred. Spoon a little of the butter over each serving, garnish with remaining 2 TBS herbs.
