I love Trader Joe's Curry Chicken Salad, so I dreamed up my own version to make at home.

Servings: 2 to 4 (depending upon how hungry your are)

Ingredients
  • 1 C. Cooked Chicken Meat, Breast or Thigh - diced
  • ¼ C. Unsalted Roasted Cashews, rough chop
  • ¼ C. Raisins
  • ½ C. Carrots, shredded to matchsticks
  • 2 Green Onion stalks, chopped
  • subheading: For the Dressing:
  • ½ C. Mayonnaise
  • ½ tsp. Granulated Garlic Powder
  • 1 tsp. prepared Mustard (I like Dijon)
  • 1 Tbsp. Curry Powder
  • 1 tsp. Honey
  • 1 tsp. Lemon Juice (the bottled kind is fine)
  • ½ to 1 tsp. Milk
  • a good pinch of Sea Salt
Steps
  1. In a large bowl, combine well all of the Dressing ingredients
  2. Add in the remaining ingredients and thoroughly mix everything together
  3. Cover and refrigerate for a few hours before serving
Notes
  • Maybe add a bit of Milk to thin the dressing just a little... YAY! That worked!
  • Use the Japanese grater for the Carrots.
  • Maybe add a little Cayenne to give it a bit more kick
