30 Minute Chicken Pad Thai

  • 2 small red bell peppers sliced
  • 1 cup fresh bean sprouts
  • 2 green onions plus more for garnish
  • ½ cup fresh cilantro plus more to garnish
  • ½ cup dry roasted peanuts chopped (plus more to garnish)
  • 2 limes

  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoons rice wine vinegar
  • 5 tablespoons brown sugar
  • 2 tablespoon peanut butter
  • 1 tablespoon sriracha hot sauce more to taste if you like some spicy heat
