2 cups sugar

1 tablespoon pure vanilla extract

3 extra-large eggs, at room temperature

1¾ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

⅔ cup hottest tap water

⅔ cup unsweetened cocoa powder, such as Pernigotti

1 teaspoon instant espresso powder

⅔ cup half-and-half
