Delicious Fake Lo Mein (20 Min, Vegan)
Ingredients
  • 7 oz your favourite pasta (7oz = 200g; wholegrain would be best)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 handful mushrooms (1 handful = 1 cup, sliced)
  • ½ red bell pepper
  • 1 carrot, sliced
  • 3 tbsp white wine (3 tbsp white wine = 1 tbsp white wine vinegar)
  • 1 handful peas
  • 1 handful leafy greens like spinach
  • 3 to 4 tbsp soy sauce
  • 2 tsp maple syrup (or honey, if that's ok for you)
  • 1 thumb ginger (ginger powder is fine too)
  • 2 tsp Sriracha (or similar hot sauce)
