Ingredients
  • ⅔ cup soy sauce
  • ½ cup water
  • 2 Tbs mirin rice wine
  • 2 Tbs rice vinegar
  • ⅔ cup light brown sugar
  • 1 tsp ginger minced
  • 1 clove garlic minced
  • 5 tsp cornstarch
  • 2 lbs chicken thighs boneless, skinless, cut into 1” by 1 ¼” pieces
  • Salt and pepper to taste
  • 2 Tbs vegetable oil
  • Bamboo or metal skewers
