Thai Pineapple Peanut Satay Chicken Salad
Ingredients

  • 80g snow peas
  • 2 tbsp coconut milk
  • 1.7kg pineapple
  • 1 small red capsicum, deseeded, cut into 1cm-thick strips
  • 1 butter lettuce, leaves separated
  • 1⁄4 small red cabbage, finely shredded
  • 1 Lebanese cucumber, peeled into ribbons
  • 2 radishes, thinly sliced
  • Coarsely chopped roasted cashews, to serve
