Beer and Cheddar Cheese Soup
Ingredients
  • 3 tablespoons olive oil
  • 1 yellow onion , chopped
  • 1 large carrot , sliced into thin rounds
  • salt and fresh ground pepper , to taste
  • 1 garlic clove , minced
  • 4 tablespoons butter
  • ⅓- cup all-purpose flour
  • 3 cups vegetable broth
  • 1 bottle (12-ounces) beer (do not use dark beer - the soup will be bitter)
  • ½- cup heavy cream
  • 1 bay leaf
  • 1 bag (8-ounces) shredded cheddar cheese
  • chopped fresh parsley for garnish
