  • 600g tomato passata
  • 80g kalamata olives pitted
  • salt & pepper, to taste
  • 5 tbs (50g) parmesan finely grated

  • 3 cups (120g) baby spinach leaves
  • 2 1⁄8 cups (500g) fresh ricotta drained
  • 2 large eggs yolks only
  • 1⁄4 cup (20g) parmesan finely grated
  • 1⁄2 tsp salt
  • 1 cup (135g) plain flour (or gluten-free if required)
