(2) Keto Protein Cookies & Muffins/Psmf Friendly
Ingredients
  • I did a lot of trips this summer and I had these ready to take with me for every trip. It was a great way for me to get in more Protein on the go. I’ve continued eating these even at home, mostly because I follow Omad and it’s a great way to top up my Protein macros.
  • Like I said in the video I’ve been making these into cookies, muffins and even little mini loaves. I’ve used the cookies to make ice cream sandwiches with, especially when it was hot. I made big chocolate muffins and I put butter on when they were still warm. The possibilities are endless. I’ve even put protein smoothie in between my cookies to make an ice cream sandwich.
  • Somethings things I’ve changed from my original keto brownies cookies recipe is the baking time and the fact that I don’t add any instant pudding to these, even when making the chocolate brownie cookies.

  • ⅓ cup nonfat Greek yoghurt
  • ¼ cup brown Swerve
  • 2 tablespoons confectioners Swerve
  • 1 ½ scoop Vanilla whey protein powder
  • 3 scoops collagen powder
  • 1 teaspoon baking powder
  • ½ teaspoon xanthan gum
  • ¼ cup +1 tablespoon egg whites
  • 1 teaspoon vanilla
  • ¼ tsp real salt
  • Optional 25 to 45 keto chocolate chips to top cookies with.

  • When making the mini loaves I added 2 tbsp of melted butter and 1 whole egg. Adding the butter and the egg up the fat content, so it doesn’t make it quite Protein Sparing but would be better for a higher fat day.

  • Preheat oven to 350°F
  • Start by mixing your yoghurt and sugars together with a handheld mixer until well combined.
  • Add the rest of the ingredients and continue mixing with your handheld mixer.
  • After everything is all mixed together use a spatula to be sure that there are no lumps or clumps.
  • Spoon out cookie mixture on a lined baking tray making 9 to 12 mounds.
  • Top with 4 to 5 keto friendly chocolate chips
  • Bake for 10 to 13 minutes. Mine took 10 minutes and up to 15 minutes when doing the muffins and mini loaves
  • Cool completely before serving or storing.

  • 38cal, 0.9g fat, 6g protein and just under 2 net carbs
