Vegan Cabbage and Chickpea Pie
Ingredients

  • 1 carrot, grated

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • subheading: For the Pie Crust:
  • 1 ½ cups all-purpose flour (or whole wheat flour for a healthier option)
  • ½ cup vegan margarine or coconut oil, cold and cubed
  • A pinch of salt
  • 4 to 5 tablespoons ice-cold water
