Refried Beans
Ingredients
  • 1 lb. Pinto Beans
  • 1 Ham hock
  • 3 cloves Garlic, chopped
  • 1 Onion, diced
  • 1 Jalapeno, scored
  • 1 tsp. Cumin
Steps
  1. Rinse the beans & remove floating beans
  2. Lightly fry the ham hock in a small amount of olive oil
  3. Add onion and garlic until fragrant
  4. Add beans, pepper, and enough water to cover the beans by 2 to 3 inches (if too much water is boiled off, just add more)
  5. When the beans are soft and the meat is coming off the bone of the ham hock, they're done.
  6. Remove the pepper and ham hock
  7. Remove the excess water and reserve in case some is needed to moisten during mashing.
  8. Use a slotted spoon to stir while it's cooking to start the mashing process. Once done cooking, use a potato masher to mash until the beans come to the desired consistency.
  9. Add Cumin and salt to taste.
