Mashed Potato Puffs
Ingredients
  • 2 cups mashed potatoes
  • 3 large eggs, beaten
  • 1 cup cheddar cheese, shredded
  • ¼ cup bacon bits
  • ¼ cup chives, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup Parmesan cheese, shredded
Steps
  1. Combine mashed potatoes, eggs, cheddar cheese, bacon bits and chives. Season with pepper.
  2. Grease a muffin pan and mound a heaping spoonful into each cup, about ⅔ full.
  3. Sprinkle cup with Parmesan cheese.
  4. Bake at 400°F until golden brown. (30 to 35 minutes)
  5. Cool for 5 minutes then put a dollop of sour cream on top. Serve warm.
Notes
  • Making it ahead - Pre-mix all the ingredients the night before and refrigerate them to bake the next day.
