Cincinnati Chilli
Ingredients
  • 5 cups water
  • 29 oz can of tomato sauce
  • 1 oz baking chocolate (unsweetened)
  • ¼ cup chili powder
  • 1 tsp cinnamon
  • 1 tsp garlic powder
  • 1 Tbsp cumin, heaping
  • ½ tsp allspice, scant
  • ½ tsp ground cloves, scant
  • 1 tsp red pepper flakes
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tsps sugar
  • 2 Tbsps apple cider vinegar
  • 2 lbs ground beef
  • subheading: To serve:
  • thin spaghetti
  • diced raw onion
  • grated mild cheddar cheese
  • oyster crackers
Steps
  1. Add the 5 cups of water to a large pot. Crumble the raw ground beef into the pot with your fingers, then use a potato masher, whisk or fork to form a watery meat mush. Turn on the heat to high. Once the meat mush is warm enough to melt the chocolate, add the tomato paste and chocolate, stirring to combine.
  2. Once the chocolate is fully melted and incorporated into the tomato and meat mixture, add the chili powder, cinnamon, garlic powder, cumin, allspice, cloves, red pepper flakes, black pepper, salt, sugar, and vinegar.
  3. Turn heat to high to bring to a boil.
  4. Lower heat to simmer uncovered.
  5. Simmer for 1 to 1 ½ hours, stirring occasionally until thickened. Skim any fat that rises in the pot.
  6. Four way. Serve over thin spaghetti, topped with chili, onions, and grated cheese. Garnish with oyster crackers.
