  • 6 cups low sodium beef broth (or stock)
  • 2 bay leaves
  • 1 sprig fresh thyme , or ½ teaspoon dried
  • ½ teaspoon coarse salt
  • ¼ teaspoon freshly cracked black pepper
  • ¾ cup pearl barley
  • 3 tablespoons fresh chopped parsley
